Almond Butter Banana Chocolate Chip Oatmeal Muffins
This year I am making it a point to practice my baking and also share with you some of the tasty recipes that I decide to try. First up comes Ambitious Kitchen muffin recipe and let me tell youβ¦these are perfect for a quick breakfast or afternoon snack. In your typically muffin pan you can make 12 which can last you for awhile as these are freezer friendly. Ok, ok I am sure you are wanting me to cut to the chase so here we go.
INGRIDENTS
-1 cup of ripe smashed banana
-2/3 cup Almond or Peanut Butter
-2/3 cups Oat-milk or milk of your choice
-2 cups rolled oats
-2 eggs
-1 teaspoon Cinnamon
-1 teaspoon Baking Powder
-1/4 teaspoon salt
-2 tablespoons Pure Maple Syrup
-1 teaspoon Vanilla Extract
-1/3 cup of Dark Chocolate Chips
Recipe Instructions:
Set your oven to bake at 350 degree.
Then in a mixing bowl add your bananas, almond butter, eggs, maple syrup, vanilla extract, & oat milk. Then stir.
After it is slightly mixed in add your oatmeal, baking powder, cinnamon, & salt. Then mix thoroughly.
Add in your chocolate chips & stir.
In a muffin pan place muffin cups & fill them to the top evenly.
Bake in over for 22-25 mins.
Add a hint of almond butter to the top & Enjoy! :)
